Crab in Butter and Garlic Sauce 牛油蒜茸焗蟹
Ingredients:
- 640g Female crab
- 3 tbsp Grated garlic
- 10 g Butter
- 1 tsp Shaoxing wine
Marinades for crab:
- 1/2 tsp Salt
- 1 tsp cornflour
Sauce:
- 1/4 tsp Chicken powder
- 1/4 tsp Black pepper
- 1/4 tsp Salt
- 4 tbsp Water
Method:
- Wash and drain crab. Chop. Marinate for 10 minutes.
- Heat half wok of oil unitl nearly boil. Scald crab and take it out
- Heat 1/2 tbsp of oil in wok. Cook butter over medium heat until melts
- Turn to high heat. Stir fry crab
- Sizzle wine. Stir fry grated garlic
- Mix well with sauce
- Cover the wok and cook with high flame for 1 minutes
材料:
- 膏蟹 1 斤
- 蒜茸3湯匙
- 牛油 10克
- 紹興酒1茶匙
蟹醃料:
- 鹽1/2茶匙
- 生粉1茶匙
汁料:
- 雞粉1/4茶匙
- 黑胡椒1/4茶匙
- 鹽1/4茶匙
- 水4湯匙
做法:
- 先將蟹洗淨後切件,以醃料醃10分鐘
- 燒熱半鑊油至7成滾,下蟹走油,取出
- 熱鑊放1/2湯匙油,轉中火下牛油。煮至溶時再轉大火。下蟹件略炒,贊酒,再下蒜茸炒香
- 下汁料拌勻,加蓋大火焗1分鐘即可
