Crab in Butter and Garlic Sauce 牛油蒜茸焗蟹

Ingredients:

  • 640g Female crab
  • 3 tbsp Grated garlic
  • 10 g Butter
  • 1 tsp Shaoxing wine

Marinades for crab:

  • 1/2 tsp Salt
  • 1 tsp cornflour

Sauce:

  • 1/4 tsp Chicken powder
  • 1/4 tsp Black pepper
  • 1/4 tsp Salt
  • 4 tbsp Water

 

 

Method:

  1. Wash and drain crab. Chop. Marinate for 10 minutes.
  2. Heat half wok of oil unitl nearly boil. Scald crab and take it out
  3. Heat 1/2 tbsp of oil in wok. Cook butter over medium heat until melts
  4. Turn to high heat. Stir fry crab
  5. Sizzle wine. Stir fry grated garlic
  6. Mix well with sauce
  7. Cover the wok and cook with high flame for 1 minutes

 

 

 

 

 

材料:

  • 膏蟹 1 斤
  • 蒜茸3湯匙
  • 牛油 10克
  • 紹興酒1茶匙

蟹醃料:

  • 鹽1/2茶匙
  • 生粉1茶匙 

汁料:

  • 雞粉1/4茶匙
  • 黑胡椒1/4茶匙
  • 鹽1/4茶匙
  • 水4湯匙 

 

 

 

做法:

  1. 先將蟹洗淨後切件,以醃料醃10分鐘
  2. 燒熱半鑊油至7成滾,下蟹走油,取出
  3. 熱鑊放1/2湯匙油,轉中火下牛油。煮至溶時再轉大火。下蟹件略炒,贊酒,再下蒜茸炒香
  4. 下汁料拌勻,加蓋大火焗1分鐘即可
